Rock Bun Cake Recipe

One of my favourites made best by my Grandma, to which I make when I get time. Go great with butter or cream.

Make about 12 cakes

Ingredients

• 225g Self raising flour
• Pinch of salt
• 100g Butter
• 100g mixed fruit (I use sultanas)
• 75g Caster Sugar
• 1 Egg (size 3)
• Milk to mix

Method

1. Heat oven to 200°C (400°F) & Grease baking trays
2. Mix the flour and salt and rub in the butter
3. Stir in the mixed fruit and sugar
4. Mix to a stiff dough with the egg and milk
5. Place in rough heaps on the trays and bake for 10-15mins until golden brown.
